2020 New Year Resolution: 52 Exotic Foods

Each year, we resolve to achieve a challenging goal for success and happiness. But after several weeks or months, our interest wears out and our enthusiasm fades away, and the accomplishment of the goal becomes an ordeal. In 2020, our family decides to make a resolution that is fun, simple and more sustainable—tasting an exotic food each week for 52 weeks.
Food plays an important role in each culture. Tasting food from different cultures enlightens our understanding of the world around us and expands our views and perspectives. We encourage you to follow our year-long journey that will quench the craving of our taste buds and satisfy the curiosity of our minds.
Week 1: Yuca con Chicharrón
Yuca, also known as cassava, is a tube-shaped root vegetable common in Latin and Caribbean cooking. Yuca root is rich in ﬁber, vitamin C, manganese, and potassium. Yuca fries are fried wedges with a light crunch, popular among Americans with Latin American heritage.
We bought from a Latino supermarket a Ziploc bag of ready-to-eat Yuca con Chicharron, which includes Yuca fries, pork, and a variety of shredded vegetables, with a dash of freshly-squeezed lime juice and hot sauce. We transferred the food onto a plate, which looked like a generously sized meal.
Yuca fries were cut into thick wedges as opposed to thin French fries, which makes them crispy on the outside and soft but densely textured inside. The chicharron (fried pork) tastes chewy and flavorful. The shredded cabbage, carrots, and peppers are soaked in lemon juice and hot sauce, adding acidity and a zest of freshness to the dish. Yuca con Chicharro is a colorful array of mouthwatering food, great for kicking off our 52-week exotic food tasting adventure.
